The basis is smooshed avocado. And in with the avocado, we’re going to add a good squeeze of lemon. I’m going to add some of my roast garlic and pepper seasoning, and a little bit of salt in there as well.
Then I’m going to start by smooshing the avocado.
Next I am adding some spring onions. You may have noticed I use spring onions a lot in my cooking, they are a great way of adding flavour.
You can give that a stir and then we are gonna add the not-so-secret secret ingredient, which is black beans. So these are just from a tin, and have been rinsed and drained.
At the moment it pretty much looks like guacamole, which is basically what it is at this point, without the tomato. And the only reason I haven’t added tomatoes is I don’t happen to have any tomatoes. But you can totally put tomatoes in here as well! Add a bit of olive oil, and then we are going to add the spinach.
I use spinach all the time in place of lettuce. I don’t really particularly like lettuce but I love spinach — that really dark, lovely green colour, just looks so healthy!. I’m gonna put quite a bit in here, and then I’m gonna try and mix this all in with the guacamole.
Now as the lemon juice starts to work its magic, the spinach will start to wilt slightly.
