To start with I’m using these miso soup sachets. You can also get jars of miso paste. You could also use a Thai soup paste. I’m going to put my miso soup into the jar, and the other thing we’re going to add into there is a squeeze of lime juice.
You could add lemon if you have it. It just needs that sort of little bit of citrus to help it along, and a little dash of soy sauce.
Then you’re going to give that a wee stir, just to try and get most of the lumps out. Now, into that, we are going to add our noodles. My preference is actually for these quick cook medium noodles that you can get from Sainsbury’s. You could also use rice noodles.
Now, the medium ones are basically already cooked and just need to be heated through. But the rice ones do need a little bit of cooking, so what I’d advise you to do is mix up your miso paste, your lime, and your soy sauce, add a little bit of boiling water and cook your noodles in this this for just a couple of minutes.
Then put the noodles into the jar, already cooked, because otherwise, just adding hot water isn’t going to be quite enough to cook them through.
