First up is using my nice julienne peeler or spiralizer. Once you have your wee pieces, you can put it into a sieve and give it a really good squeeze. Add a little bit of salt, and that will help draw the moisture out of the cucumber so you’re left with the cucumbery-ness but without all the water.
No cucumbers were hurt in the making of this video :) Then we add the cucumber into our yoghurt, and give that a good stir.
The middle part you have left you can actually just chop up and add that too.
Then we’re going to add a wee bit of salt and a dash of olive oil.
I do this sometimes with lamb burgers, as a side, if we’re having like sweet potato wedges or something. It’s nice instead of mayonnaise, and it’s another way to sneak in an extra portion of veg.
If you wanted to you could also add spring onion, you could add some chives, you could crush a garlic in that. So different things you could add that give you a completely different flavour.
